Contest Educates Kids about GERD and Inspires Creativity in
the Kitchen!
The Healthy
Kids Can Cook recipe contest challenged kids and
teenagers across the country to show off their cooking skills
by creating a healthy, original recipe that was also appropriate
for people with gastroesophageal reflux disease (GERD).
The contest, sponsored by Healthy Kids Challenge and AstraZeneca,
was aimed at getting kids excited about eating and preparing
healthy meals.
Kelli
Fisher of Plainview, New York, won the Healthy Kids Can Cook
contest with her recipe, “French Toast Gone Bananas”.
As the winner, Kelli and her family receive a two-day, one-night
trip to Philadelphia. They will be guests of Chef Douglas
Rodriquez at his famous Philadelphia restaurant, Alma de Cuba,
where they will enjoy a gourmet, GERD-friendly meal.

| Ingredients
for 3 servings:
6 medium-thick slices fresh whole wheat
bread
Filling
¼ c. all-natural peanut butter
½ c. sliced grapes
1 Tbsp. pure honey
Crust
½ c. egg substitute
¼ c. non-fat soy milk
2 Tbsp. fresh orange juice
¼ c. apple juice
½ tsp. vanilla extract
½ tsp. cinnamon
4 sprays of butter spray
¼ c. oat bran
¼ c. bran flakes
Banana Mash
2 small bananas
3 Tbsp. non-fat soy milk
¼ c. all-natural grape juice
2 Tbsp. fresh orange juice
2 Tbsp. fresh apple juice
2 tsp. confectioner’s sugar
1 Tbsp. honey
5 sprays of butter spray
1 tsp. peanut butter
1 ½ Tbsp. raisins
Garnish
Few banana slices
Few grape slices
Sprinkle of confectioner’s sugar
Sprinkle of cinnamon
Brush of honey |
| Preparation:
Spread peanut butter on 3 bread
slices. Drizzle honey on top of the peanut butter.
Place the sliced grapes on top of the peanut butter
(3 rows of 3). Make 3 sandwiches by topping each
with another slice of bread. Cut each sandwich
into 3 rows. Set aside.
In a medium bowl, combine all
the crust ingredients, minus the bran. Combine
the oat bran and bran flakes in another bowl.
Dredge each sandwich strip in the egg mixture,
then roll in the bran mixture. Place each sandwich
on a non-stick baking tray sprayed with butter
spray. Bake at 350 degrees for 20-25 minutes until
desired crispness.
Combine all banana mash ingredients in a small
saucepan. Continuously stir over medium heat until
it thickens and the bananas are mushy. Set aside.
To serve, pour a layer of banana
mash on a plate followed by 3 sandwich strips.
Garnish with a few banana and grape slices and
sprinkle with confectioner’s sugar and cinnamon.
Brush some honey on the side of the plate.
